INSTANT POT® KETO ALMOND CHICKEN

Serves about 5 people

INGREDIENTS
1 whole chicken, cut up
5 tablespoons coconut oil
2 tablespoons almond flour
5 cups bone broth
1 tablespoon dried basil1 tablespoon cilantro
*Add your favorite vegetables, herbs and spices

INSTANT POT® RECIPE
1. Pour all ingredients into the inner pot of the Instant Pot®.

2. Close the lid, set the pressure release to Sealing, and select Manual/Pressure Cook. Set the Instant Pot® to 5 minutes on high pressure, and let cook.

3. Once cooked, let the pressure naturally disperse from the Instant Pot® for about 10 minutes, then carefully switch the pressure release to Venting. As you do this, you may want to cover your steam valve, to avoid any accidental splashing.

4. Open the Instant Pot®, serve, and enjoy!

TRADITIONAL RECIPE
1. Preheat the oven to 350 F. Coat the chicken pieces with the coconut oil and then cover evenly with the almond flour. Meanwhile, keep the bone broth over low heat and let simmer. Place the chicken pieces in the oven and let cook.

2. Once cooked, remove the chicken pieces, and place in the simmering broth. Sprinkle in the dried basil and cilantro.

3. Using a ladle, scoop the broth into bowls, and enjoy!

ALMOND CHICKEN

  • 1 whole chicken (cut up)
  • 5 tablespoons coconut oil
