INSTANT POT® KETO MUSSEL STEW
Dairy-Free, Gluten-Free, Keto-Friendly
Serves about 12 people
INGREDIENTS
12 cups bone broth
3 jalapenos, seeded and sliced
8 cups mussels, cut into chunks
2 tablespoons cilantro
8 tablespoons coconut oil
2 tablespoons parsley
*Add your favorite spices, herbs, and vegetables
INSTANT POT® RECIPE
1. Pour all ingredients into the inner pot of the Instant Pot®.
2. Close the lid, set the pressure release to Sealing, and select Manual/Pressure Cook. Set the Instant Pot® to 3 minutes on high pressure, and let cook.
3. Once cooked, perform a quick release (covering the steam valve, so as not to spray liquid). Open the Instant Pot®, and remove the food.
TRADITIONAL RECIPE
1. Coat a large pot with the coconut oil, place over low heat, then pour in the bone broth.
2. Once melted, add in all other ingredients (except mussels). Cook on low heat, for 30 minutes, stirring occasionally.
3. Add in mussels, cook until opened.
4. Serve, and enjoy!
