INSTANT POT® KETO WATERCRESS SOUP
Serves about 6 people
INGREDIENTS
6 tablespoons coconut oil
6 cups bone broth
1 pound watercress, trimmed and chopped
1 tablespoon parsley
1 tablespoon dried basil
4 tablespoons grass fed butter
*Add your favorite vegetables, herbs, and spices
INSTANT POT® RECIPE
1. Pour all ingredients into the inner pot of the Instant Pot®.
2. Close the lid, set the pressure release to Sealing, and select Manual/Pressure Cook. Set the Instant Pot® to 5 minutes on high pressure, and let cook.
3. Once cooked, let the pressure naturally disperse from the Instant Pot® for about 10 minutes, then carefully switch the pressure release to Venting.
4. Open the Instant Pot®, serve, and enjoy!
TRADITIONAL RECIPE
1. In a large pot, melt coconut oil over low heat. Pour in bone broth, then sprinkle in basil. Stir thoroughly.
2. Mix in butter, and then the watercress. Stir and let simmer. Remove from heat.
3. Puree soup in a blender, then return to pot and let simmer for 10 minutes.
4. Ladle soup into bowls, serve, and enjoy!
WATERCRESS SOUP
- 6 tablespoons coconut oil
- 6 cups bone broth
- 1 pound watercress (trimmed and chopped)
- 1 tablespoon parsley
- 1 tablespoon dried basil
- 4 tablespoons grass fed butter
- *Add your favorite vegetables, herbs, and spices
- In a large pot, melt coconut oil over low heat. Pour in bone broth, then sprinkle in basil. Stir thoroughly.
- Mix in butter, and then the watercress Stir and let simmer. Remove from heat.
- Puree soup in a blender, then return to pot and let simmer for 10 minutes.
- Ladle soup into bowls, serve, and enjoy!
